During the selection process at our saw mill, where the wood is transformed into staves, all staves with aesthetic defects (knots, goats and flashes) are put to one side. These present no technical defects (leakage, porosity and veins) and are therefore fully functional. These are used to construct the privileged barrels, as they offer the same quality at competitive prices.
